I thought I had a very good meatloaf recipe but of course this was able to top it!! I just knew it would and bought the special meatloaf muffin pan even before I tried it for the first time. 😁 I made the gravy also and it’s so delicious and easy. I have made meatloaf my holiday dinner before with the ketchup glaze, but this year I will make the mini loaves again with gravy. Thank you for this.

Can they be frozen?

Thank you Maria! Yes they can definitely be frozen. In early November I made two batches and freeze them for Thanksgiving and Christmas! Makes the large family meal so much easier and so little cleanup!

Second time making this loaf. Will be serving for Christmas dinner! Gravy is a nice compliment. May even add a nice cranberry sauce along side.

I didn’t have the silicone muffin pan & didn’t want to buy if I didn’t like this.... I’m ordering the pan today! These are so good & love the gravy too. Thanks for another delicious recipe 😊 Btw the paper cupcake liners work but would be better without them...

My first attempt at this type of muffin pan meatloaf was about 5 years ago 😂 but I put it aside because my first cookbook deal rolled around, then my second one 😃 and once I returned to it it only took another two attempts to get it to a place where I thought it was perfect! So I’ve been looking at this recipe for a while, but felt a little scared. Does anyone else ever feel like this? Anyway, I’ve followed all the instructions and we’ll be testing out our Christmas dinner main dish later today 🤞🤞🤞

Hi Dana! It’s a “bigger” recipe but once you make it I think it’ll be less intimidating ! I always question whether to add “tips” because they can make the recipe seem more complicated but I think in this case and for this recipe, they help a lot! Let me m is how it goes !!!❤️

They turned out beautifully! Really moist, which you can’t always tell from pictures. Your instructions and tips were perfect and all super helpful. I’m so happy to now have these prepped and in my freezer 👍 after all the prep, we went hiking with my doggie and when we returned my husband made brunch. By the time it was teatime neither of us were particularly hungry for a roast dinner, and I didn’t have any more energy, it being the end of the day and weekend! So I sneakily tested one and loved it and we both ate soup 🤣. The really exciting part is I only need to make potatoes and veggies for tonight’s dinner, as I made all the effort on my terms yesterday!! A definite thumbs up from someone who gets overwhelmed easily 👍💗 thank you Ashley x

I finally subscribed to the substack JUST for this recipe :) - can't wait to try it. i can't bring my "usual" (OMS Salmon recipe) to our neighbor's thanksgiving b/c this year my sister is coming too! and she has an extreme fish/seafood allergy. OFF to figure out what ingredients i need :)
