Another delicious meal!! Simple but fantastic. I did make quinoa to go with it as I wanted to stretch the meal for leftovers.

This is one of those recipes that have ingredients that I always keep around. (I always keep tofu and frozen veggies stocked) So this will definitely be added to my rotation of week night meals! Easy to make, delicious and satisfying. Everyone loved it. This sauce! It's one of my favorites and I love the orange version in your newest cookbook with the vermicelli noodles. I make that one frequently too. Thank you! I absolutely love your beautiful cookbooks and excited to be here on your substack! :)

Regan, you're so kind, thank you for the cookbook love! And I'm so with you on sauces! A good sauce is all you need right?! The vermicelli sauce...my husband and I pretty much but it on everything for an entire month 😂

Made this for dinner tonight and it was a huge hit. We did the peanut butter and peanut option. It was one of the best tofu meals I’ve ever made. Thank you, Ashley, for another great recipe.
