My introduction to mulligatawny soup came from that memorable Seinfeld episode—remember the iconic "No soup for you!" line? Now I'm trying my hand at my own version.

Mulligatawny is an Indian soup known for its aromatic blend of spices. It varies widely in its interpretation, whether in restaurants or home kitchens. Despite the variations, most versions share common elements: spices, vegetables, rice, and protein.

While certain variations include coconut milk, I've opted for a leaner, fat-free rendition thickened by blending a portion of the soup. I've also selected split red lentils as my plant-based protein source, as they serve a dual purpose by aiding in thickening the soup.

If you’re using leftover rice, this becomes a very convenient one-pot family meal!
