your (& my) summer burger— black bean zucchini burger!
No equipment needed, quick, easy! And, as always, vegan, gluten free, & oil free!
Hey there health foodie, it’s summer! Hooray! And you have stuff to do, right? So let’s get to it; this is your sunshine-season burger!
It’s cheap, requires minimal equipment (make it anywhere), features summer superstar zucchini, and is suitable for the BBQ — reasons to make this your July 1 (Canada Day 🇨🇦) and July 4 (Independence Day 🇺🇸) burger!
How-to video
It’s worth mentioning here that bean burgers are hard to master.
Have you ever made a crappy burger? Oh, I certainly have.
The texture is the biggest challenge — I am so disappointed by a squishy bean burger that oozes out over the bun when you take a bite. Equally disappointing is a dry, crumbly burger that needs lots of condiments to make it edible.
For this reason, I test and test and test my burger recipes. The burgers in my cookbooks have been made dozens of times by me, chef friends, and my amazing volunteer testers.
I brought that same level of scrutiny to this black bean zucchini burger and I want to guarantee your success so I’ve included a how-to video!
Why?
So why am I offering you another burger? I wanted to make one that didn’t require any large equipment. No processors or blenders.
1. So that you could make it anywhere (on vacation, at the cabin or cottage) or very last minute or just when you want to clean fewer dishes after dinner.
2. So that anyone new to making plant-based burgers (and isn’t ready to invest in additional kitchen equipment) could have a delicious and healthy homemade bean burger experience. If you have a friend who fits into either category, send them this recipe!
