Cauliflower is my favorite veg.

Yes because it’s a nutritional powerhouse, an OG superfood if you will.

But also because it can be worked into almost any recipe, it’s always along for the ride. Even more impressive, it can be the main event – cauliflower wings, steak, rice, even a whole roast!

Cauliflower is always in my fridge.

You know what else is always in my fridge? Hummus.

My son and husband run through hummus like it’s on tap. Me being the tap.

So when dinner or lunch needs to happen in under 30 minutes, hummus is often involved. It’s already there on standby and you can do so much with it! I’m still surprised at how far a good dollop of hummus can go.

In this recipe there are three main parts: roasted cauliflower, warm quinoa salad, and hummus.

The hummus is painted onto the plate and serves as a foundation for the warm salad but also as a dressing of sorts. The cauliflower is mixed in and the flavours are brightened and deepened with some delicious bits – toasted almonds, dried cranberries, fresh herbs. These keep everything fresh and interesting without being complicated.

Each spoonful scoops up a little of everything and the zing of lemon rings throughout.

This type of presentation — stuff piled onto hummus — is all the restaurant rage right now and this at-home version is easy and simple, especially if you use a pre-made or purchased hummus.
