This post is a short one. Short and delicious.

The coming days will be busy for many of us and between shopping, wrapping, party-going, child-minding, cleaning up, sleep deprivation, and all the other things that go along with the holiday cheer, we often forget to nourish ourselves.

Without a lot of time to cook or meal prep, we end up eating stuff we wouldn’t normally choose, or not eating at all.

Here’s where having soups, some already-cooked grains, and pre-chopped veggies in the fridge on standby can be a life saver! And with only a few days to go, I’ve begun stocking my fridge and have this creamless cream of cauliflower soup made and ready!

This time of year pureed soups are at the top of my list of comforting and nourishing meals. They’re easy to make, easy to reheat, and (usually) easy on the wallet. On a busy and bustling day, a whole-food creamy soup, like this one, is just what the doctor ordered!

Cruciferous Goodness

This recipe features my favorites: kale and cauliflower. Both of which are from the cruciferous family.

In addition to being low in calories and high in fiber, cruciferous veggies have incredible anti-inflammatory powers. The sulfur-containing compounds in cruciferous veggies break down into biologically active compounds, such as sulforaphane, which may have anti-cancer properties and support detoxification processes in the body. I try to eat cruciferous veggies every single day — raw, roasted, steamed, or simmered.
