Today I'm sharing two recipes I made back to back — one for lunch and one for dinner the next day.
Both were inspired by a trio of ingredients that when combined, create culinary magic!
Avocado, fresh dill, and lemon work wonderfully together, whether as a garnish, in a salad, or even in pasta as you'll see. Scallions could be added to this trio as well!
Lentil Quinoa Salad
The first recipe is an easy, light, and super zesty quinoa and lentil salad. Its biggest draw might be that it's packed with protein. I made this early in the morning, let it marinate for a few hours in the fridge, and then added the avocado just before having it for lunch.
This is also a great salad to bring to a BBQ or potluck.
