Zoodles have a special place in my heart. They are easy, versatile, and make wonderful use of the summer’s most iconic crop: the zucchini!
This begs the question, is a spiralizer worth the investment?
Depending on the model you choose the price ranges from $20 to $50. I use this plastic spiralizer and I’ve had it for over 6 years. It comes with interchangeable blades and suction cups to secure it to your counter so it won’t move around. I think it’s easy to use and clean. One obvious drawback is that it’s an additional piece of kitchen equipment you have to store. However, if a plant-based diet and lifestyle are a priority for you, then the spiralizer is an excellent tool to have on hand.
This recipe has a mixture of quinoa and lentils as its base, offering loads of protein and fiber, and then a zucchini noodle salad is layered on top.
The star of the recipe is the dressing — a slightly spicy and super zingy sauce that you can use on any grain, veggie, or bean dish.
Garnishes are optional but can add loads of flavor and phytonutrients.
This recipe is very flexible you can toss almost any veggie in with the zoodle salad. Use up what you have and experiment!
