I didn't even ask what his favorite was (probably a Pad Thai spinoff from one of my cookbooks) because I knew this meant it was a hit. I also knew I had created something special when we were both eating leftovers straight from the casserole dish with the oversized serving spoons.
This plant-based 7 layer casserole draws inspiration from the iconic 7 layer dip, a staple appetizer at every party in the 90s and 2000s. Its popularity persists and it was always my favorite – the cheese, the sour cream, the taco seasoning! I had been thinking about reinventing this party favorite without dairy and meat for years and finally did it.
I put a lot of thought into every layer, presentation, and flavor profile. I wanted it to be substantial – both in portion size and taste – and a definite crowd-pleaser. As plant-based foodies, we always seek meals and recipes that can satisfy everyone (vegan and non-vegan), and this recipe does just that.
It's a dish everybody will love! It’s perfect for parties, potlucks, summer BBQs, and big family dinners.
The recipe is easy but does take some time, like most casseroles. It's big and has many components however the payoff is worth it.
You'll also be pleased to know that this casserole is a nutritional powerhouse, offering everything from complete protein to antioxidants to soluble and insoluble fibers. It also delights the palate with an impeccable mix of sweet, spicy, savory, tangy, and fresh flavors.
